Priming by way of biere.
Deep fried *real* fries would have been better, but the scent of the deep fryer can linger for days in a house, so out of respect for my hosts, Andy and Québécoise Lynda, we used oven-baked Ore-Ida® Golden Fries®.
The curds were real, Beecher’s fresh curds from New Seasons. They’re ridiculously expensive – $5.45 for 6oz of friggin CURDS – but this was a special occasion.
Here we spoon on the authentic St Huber ready to serve Poutine sauce (aka gravy), from Lynda’s personal stash.
Ta-da!
The poutine was a success (unlike my beloved Allouettes).
I’ll just have a little more poutine . . .

aw, i love fin du monde as well, and my whole foods was out of it the other day when i was searching for it… boo. the poutine looks good, but did you eat it with mayonnaise?
devlyn – Nope no mayonnaise. Just pure unadulterated poutine goodness!
I spent it in the gracious company of the CAS who didn’t laugh at me despite my admitting everything I know about Canadian Football is from a sitcom.
Oddly enough, a couple of the Canadians had never tried poutine. But I have!
Beer! French fries! Cheese! Gravy! All four food groups!

The mayo on the fries gets washed down rather nicely with holiday type beer. Wait, that’s coming soon. Might see you there on Friday in the afternoon…
